Subway Sweet Onion Sauce Copycat Recipe

I love Subway's sweet onion sauce and have been looking for a good copy cat recipe for it for quite some time. There is some version floating around online that just doesn't quite cut it but the same recipe seems to copied over and over again on all kinds of websites.

Instead I started out with a simple onion salad dressing recipe and modified it to taste more like the restaurant one. Turned out pretty well. Let me know if you like it.

1 cup olive oil
1 cup sugar
1 small onion
1 tsp salt
1 tsp dry mustard
1/2 C white vinegar
1 small carrot, grated
1 tsp celery seed

Throw the onion in a blender and pulse until it is finely chopped. Add the oil, salt, sugar and mustard powder and blend until mixed and pretty smooth. Add the vinegar and blend some more. Add the very finely grated carrot and the celery seeds and give it a few more pulses in the blender to combine.

This is great on sandwiches or salads.
