Copycat Don Pablo Salsa Recipe

I love, love, love fresh homemade salsa and after visiting Don Pablo's for lunch one day, I had to recreate their salsa. I like this with just plain tortilla chips. Makes a nice appetizer and I love it as a snack. The salsa keeps in the fridge for a few days, but is best fresh.

  • 2 1/2 cups canned diced tomatoes
  • 1/4 cup red onion chopped
  • 1/2 cup tomato paste
  • 2 cups water
  • 1/2 teaspoon garlic powder
  • 1/2 cup fresh cilantro, chopped
  • 1/2-1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 jalapeno peppers (remove the stems and for less heat remove the seeds and spine)
  • 2 cups diced tomatoes (preferably fresh - otherwise canned will work)

Put everything but the 2 cups of diced fresh tomatoes into a blender and blend just until well combined. You want everything well blended but it doesn't have to be super smooth.

Add the diced tomatoes and pulse just until combined.
