- 2 1/2 cups canned diced tomatoes
- 1/4 cup red onion chopped
- 1/2 cup tomato paste
- 2 cups water
- 1/2 teaspoon garlic powder
- 1/2 cup fresh cilantro, chopped
- 1/2-1 teaspoon ground cumin
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 jalapeno peppers (remove the stems and for less heat remove the seeds and spine)
- 2 cups diced tomatoes (preferably fresh - otherwise canned will work)
Put everything but the 2 cups of diced fresh tomatoes into a blender and blend just until well combined. You want everything well blended but it doesn't have to be super smooth.
Add the diced tomatoes and pulse just until combined.
